idiazabal cheese

Idiazabal cheese is a Protected Designation of Origin and is produced in the Basque Country and Navarra. To make this cheese, only raw sheep's milk from the Latxa and Carranzana breeds is used. It has an intense and clean flavor with a slightly spicy tone. It is very persistent in the mouth after tasting.

In 1995 it obtained the first prize for the “Best European Sheep Cheese”.
